Nakadana Onsen Nakadana-so," where Toson Shimazaki, a great writer of the Meiji era, was healed, proposes to rediscover the charms of the region. By experiencing the local culture that has taken root in this area, new travel discoveries and connections can be made, allowing visitors to rediscover the charms of the region.
During the year from July 1, 2023 to June 30, 2024, Nakadanasou will use seasonal ingredients that can only be enjoyed in that season, and will offer new culinary cultural attractions unique to Shinshu, while respecting local ingredients and traditions.
The area around Komoro City, Nagano Prefecture, where Nakadanasou is located, has long had a food culture unique to this region.
This plan was initiated with the hope of contributing to the inheritance and development of the local food culture by creating a "new form of Shinshu cuisine" based on the attractive Shinshu Komoro region that has been passed down from generation to generation.

The "Onsen Tokoroten" plan is a cool and refreshing dish perfect for hot summer. The mineral-rich hot spring water, of which Nakadanasou is proud, is used for the tokoroten. The natural color and flavor of the ingredients can be tasted by making it from natural grasses.
Our chef has created 6 types of seasonings recommended exclusively for this plan. You can choose 3 kinds per person.
*Please select 3 kinds of Tokoroten of your choice per person at the time of check-in. It will be served as an additional dish to the kaiseki meal at dinner.

This special plan allows you to enjoy the autumn flavors nurtured by the forests of Shinshu, featuring three kinds of mushrooms from Shinshu and pork from Mochizuki, Nagano Prefecture, in a special marinated dish flavored with yuzu jam.
Enjoy the exquisite harmony of ingredients unique to Nagano Prefecture, which is rich in the blessings of the four seasons, and mushrooms, the bounty of the forest. The aromatic flavor of the mushrooms will bring out the full charm of autumn in Shinshu.
